		<description>What a fabulous description! Thank you! And what a brilliant idea, when in a new locale, to take a cooking class and actually *make* food unique to there. That way, when you&#039;re back home (or wherever), you know the real deal, even how to encorporate interesting spices. So cool. Sounds like you both like your food pretty spicy/hot. Do you both like about the same amount of hot? That&#039;s handy for sharing, both at the restaurant and with leftovers brought home. I always order &quot;mild plus,&quot; and Dad orders medium. When we went out the other night with the Windmillers (to Siam Spicy in Novi, across--west--from Twelve Oaks, Ron got extra hot or something crazy like that. ;-) Maybe Dad gets medium for the very purpose of me not maneuvering my way into his food. 		<description>Beth and I actually made this food (with some help). We went to a Laos cooking class one day and prepared these three dishes. 

The top dish is a traditional chicken stew. I forget what the Laos name for it was. It was very spice (we added 2 chilies). On the left is papaya salad which was also spicy. And on the right is a traditional Laos dish called lap, which is minced meat (chicken/beef/pork) with a bunch of spices (mint, coriander, chilies, etc.). 

All were very good, but I think we liked the lap the best. We have also had that at several restaurants.</description>
